This is an old recipe I've adapted over the years, it's never the same as I just chuck in whatever we have and don't usually measure the spices etc., but having logged it in MyFitnessPal recently I realised it's such a great filling meal with loads of protein and only 410 calories!
I love having extra calories spare for a pudding so I thought I'd write down how I made it this time! ;)
It's another quick and easy recipe which is always a win too!

This recipe is affectionately known in our house as "Chicken Noodle Thing".
Serves 5
410 calories per portion
Ingredients:
1 tbsp olive oil
1 tbsp spring onion, chopped
600g chicken breast, diced
2 tbsp reduced salt soy sauce
1 tsp ground cumin
1 tsp paprika
1 tsp garlic granules
1 tsp caraway seeds
1 tsp cayenne pepper
1 tsp ground black pepper
200g baby button mushrooms
155g frozen soya beans
110g mange tout
600g high protein noodles
Method:
Heat the oil in a wok and gently fry the onion for 1-2 minutes.
Add the chicken, 1 tbsp soy sauce and all the spices & seeds and stir-fry until the chicken is almost cooked through (3-5 mins), add the mushrooms and green veg and stir-fry for a couple more minutes.
Stir in the noodles and 1 more tbsp of soy sauce and cook for 2-3 minutes.
